The east quarters of the middle courtyard contain granaries, pestles, and millstones, with gates opening in the south, west, and north directions. Daily, the management and preparation of rice, grain, and provisions are bustling; the traffic of people and supplies is especially heavy in this courtyard. Its great hall to the north is called the Food Preparation Kitchen. An expansive hall is set horizontally, wide to the limits of one's gaze, containing thirty-six stoves arranged from east to west, made of silver and copper. The various dining utensils within belong to the heavens and are beyond human conception. East of the kitchen is a courtyard whose gate opens to the south; it is the storehouse for rice and flour. Utensils of all kinds are stored in this courtyard. In the northeast corner is a small courtyard containing chambers and buildings where the tenzo (cook-director) resides. Whenever food is prepared daily, the karmadāna stays before the kitchen hall, while the tenzo resides in the courtyard behind the kitchen; each has his own duties and they do not oversee one another.
