魁膾（上切韻苦回反師也𩠐也下古外反割也切肉也細切為膾未詳所立名有有儈聲類合市人非此義也）。

魁膾 (The upper character, according to the Qieyun, has the fanqie ku-hui [kuí], meaning a master, a head. The lower character has the fanqie gu-wai [kuài], meaning to carve, to slice meat; finely sliced is kuai. The origin of the designation is not yet detailed. There is a character 儈 [broker]; the Shenglei defines it as one who matches market traders, but this is not the meaning here).
