madhyo 'amlaḥ kaṭukaścāntyaḥ snigdhānāṃ madhuraḥ paraḥ /
madhyo 'amlo lavaṇaścāntyo rasaḥ snehānnirūcyate //

sour is intermediate, and pungent is last; among the unctuous, sweet is supreme, / sour is intermediate, and salty is last: thus is taste defined by unctuousness.
