The arrangement of that meal is as follows. They set out bread — their bread is thin flatbread (ruqāq), resembling jarādīq loaves — and they cut the roast meat into large pieces, such that a sheep makes four or six pieces, and they put a piece before each man. They set out round cakes made with ghee, resembling the mushrak bread of our country, and in the middle of them they put the soap-like ṣābūniyya sweet, and they cover each of these cakes with a loaf of sweetmeat which they call khishtī, meaning "brick-like", made of flour, sugar and ghee. Then they set out meat cooked with ghee, onions and green ginger in Chinese dishes. Then they set out something they call sambūsak, which is minced meat cooked with almonds, walnuts, pistachios, onions and spices, placed inside a thin wafer fried in ghee; they put five or four pieces of this before each person. Then they set out rice cooked with ghee with chicken on top of it, then they set out luqaymāt al-qāḍī, which they call al-hāshimī, then they set out al-qāhiriyya.
