擇菜有五事：一者當去根、二者當令等、三者不得令青黃合、四者當使澡淨、五者皆當令向火知之乃得布用。

Selecting vegetables has five matters: 1. One should remove the roots. 2. Make them uniform. 3. Do not let green and yellow be mixed together. 4. Make sure they are washed clean. 5. They must all be brought to the fire and known [to be fit] before being laid out and used.
